Around the holidays  you might enjoy a cranberry recipe and a holiday drink recipe. Click the link for How To's in the left column to learn how to make a turkey. One section of the cookbook is devoted to holiday recipes. Enjoy!

Cranberry Salad (page 44)

This tangy, sweet salad is a great holiday dish!

2 packages lemon gelatin (3oz. each)

1/2 cup sugar

3/4 cup boiling water

1 can mandarin oranges, drained (11 oz.)

1 can whole cranberries (16 oz.)

1 can crushed pineapple (15 oz.)

1) In a large bowl, combine gelatin, sugar and boiling water. Stir until dissolved and cool slightly.

2) Chop mandarin oranges in a food processor or with a knife.

3) Add mandarin oranges, cranberries and pineapple (with juice) to gelatin and stir.

4) Pour into a serving dish and chill until firm, at least 3 hours.

Prep Time: 12 minutes + 3 hours chill time.

Makes: 6 cups

Wassail (page 126)

Look for Apricot Nectar in the Mexican food section of the grocery store.

4 cups pineapple juice

2 cups apple cider

1 can apricot nectar (12 oz.)

1/2 cup brown sugar

12 whole cloves

6 cinnamon sticks

1) Combine juice, cider, water, nectar and brown sugar in a large pot or slow cooker.

2) Tie cloves and cinnamon in a cheesecloth (or coffee filter) and add to the pot. Bring to a boil.

3) Reduce heat and simmer until serving time. Remove spice bag before serving.

4) Serve in festive mugs with a cinnamon stick and a "Merry Christmas."

Prep Time: 15 minutes + cook time

Makes: 8 cups
